How do I create an Emergency Profile sheet for my client

This feature is very similar to the account profile/face sheet that uses text block to display a document about the account.

This feature allows users to create a user configurable "template" using reserved words - containing medical emergency info. One example of its use is that it’s something that would accompany a resident to a hospital.

You can view this with the button at the top of the account profile:

The document looks similar to the account profile (it all depends on which reserved words you would like to display):
